Island Larder

Nicola and the team at Island Larder generously shared this recipe for Puffin Poo Fudge Slice.

Puffin Poo® Fudge Slice

Base:

  • 2 packs digestives
  • 100g puffin poo® pieces (available from island larder)
  • 250g Shetland butter
  • 1 can condensed milk
  • 100g milk Belgian chocolate buttons (available from Island Larder)
  • 2 tbsp cocoa powder
  • 50g mini white mallow (available from island larder)

Topping:

  • 200g white Belgian chocolate buttons (available from Island Larder)
  • 1 tsp vegetable/sunflower oil
  • Nevfoo o’ Puffin poo® pieces

Method:

  • Crush Digestives Finely
  • Add cocoa powder, mini mallow and puffin poo® pieces to digestives
  • Melt butter with milk buttons
  • Add to digestive mix and add condenced milk
  • Mix. Press firmly into tin lined with clingfilm.
  • Chill for 30 minutes
  • Melt white buttons and add oil – mix
  • Top slice with white chocolate and more Puffin Poo® Pieces

C'est La Vie

Valerie at C'est La Vie, kindly shared her recipe for Pear Cake

Pear and anise cake

  • 180 g flour
  • 3 eggs
  • 150 g brown sugar
  • 150g butter
  • 2 pears
  • 1/2 teaspoon ground aniseed
  • 1/2 sachet baking powder
  • 1 pinch salt
  • Preheat the oven to 180°C.

Wash the pears and cut into small pieces without peeling. If you don't have ground anise, you can grind the green anise seeds in a mortar or coffee grinder.

Butter and flour a cake tin.

Whisk the eggs with the brown sugar in a large bowl. When the mixture doubles in volume and becomes frothy, gradually add the flour, salt and melted butter. Add the pears and ground aniseed. Mix gently. Stir in the yeast. Pour the batter into the tin and place in the oven.

Bake for 40 minutes. Before unmoulding, leave the cake to cool slightly.
